Baked by Susan’s Crazy Chocolate Cake is Crazy Good

When I was growing up, my mother would always make this cake for all our birthdays. It is super easy to make and is perfect for a quick weeknight dessert or to bring to a party. This recipe makes one single layer, 8-inch cake. You can mix it and bake it in the same pan. It’s call Crazy Chocolate Cake and it’s crazy because it has no butter, no eggs and no dairy – it’s crazy that it becomes a cake at all!  

I hope you make this cake often. The ganache glaze is optional (but necessary in my opinion). If you want to minimize calories or are short on time you can sprinkle powdered sugar on top of the cake.

Crazy Chocolate cake 

  • 1 ½ cup of all-purpose flour 
  • 1/3 cup of cocoa 
  • 1 cup sugar 
  • ½ teaspoon salt 
  • 1 teaspoon of baking soda 

Mix all ingredients together.  Add: 

  • 1 teaspoon vinegar 
  • 1 teaspoon vanilla 
  • 1/3 cup vegetable oil 

Mix and add 1 cup of water 

Pour into an 8-inch pan. 

Bake on a sheet pan in the oven for 35 minutes. 

Let cool before icing with optional chocolate ganache.   

Chocolate Ganache 

  • ½ cup semi-sweet chocolate chips 
  • ½ cup heavy cream 

Heat the cream in the microwave until it bubbles (should be at least 200 degrees). 

Pour over the chocolate chips and let sit for 10 minutes. Stir until the chips are melted. Spread over the cake. Sprinkle with rainbow sprinkles. 

Serves 8.
